Santa's Giant Ginger Cookies

Twas the night before Christmas, and all through the house, the scent of ginger cookies lingered, waiting for Claus.

It’s a family tradition we’ve honored for years, that’s secured us full stockings and sweets up to our ears.

Whatever it takes to keep Santa on track, so he can safely deliver all the presents in his sack.

We double the batch when we bake these treats, so there’s plenty to share with all of his peeps.

Santa’s Giant Ginger Cookies Recipe:

Ingredients:

  • 2 1/4 C flour

  • 2 tsp ground ginger

  • 1 tsp baking soda

  • 3/4 tsp ground cinnamon

  • 1/2 tsp ground cloves

  • 3/4 C shortening or butter (I use shortening)

  • 1 C sugar

  • 1 egg

  • 1/4 C molasses

  • 2 Tbsp sugar (reserve for rolling dough in)

Directions:

  • Combine flour, ginger, soda, cinnamon and cloves. Set aside.

  • Beat shortening (or butter) with mixer on low, gradually adding 1 cup of sugar; beat until fluffy.

  • Add eggs and molasses; beat well.

  • Stir dry mixture into wet mixture.

  • Shape dough into 1 1/2” balls and roll balls in the extra sugar.

  • Place on ungreased cookie sheets about 2 1/2” apart.

  • Bake at 350 for about 10 minutes, or until light brown, but still puffy.

  • Transfer to wire rack for cooling 2 min after taking out of oven.

*Zabelicious Tip:

Don’t overbake. Santa likes them soft and chewy.
