Wild Rice Frittata
Looking for a way liven up your next meal? Frittata’s are a fabulous option for breakfast, lunch or dinner. This Italian inspired dish is basically a like a crustless quiche. The wild rice actually becomes a little crunchy and crust-like. I make it on the stove top and slow cook it in a skillet, rather than baking it in the oven. You can prepare in advance and reheat later, serve at room temperature, or piping hot, like I do. As a Minnesota native, I look for any opportunity to incorporate wild rice into a meal. It’s one of my favorite foods! If you don’t have any wild rice on hand, you could always substitute hash browns for your base.
As with most recipes, I like to improvise, adjusting amounts depending on how many guests I’m serving. Therefore, I don’t have specific measurements listed below. Each time I whip this dish up, its a bit different, depending on what fresh ingredients I have on hand. Here’s the basic recipe we use to make Wild Rice Frittata. I think you’ll love the nutty texture it brings to this classic egg dish. Enjoy!
Wild Rice Frittata Recipe
Ingredients:
wild rice (cooked al dente) (or substitute leftover potatoes/hashbrowns)
mushrooms (sliced)
green onions/chives
spinach
cherry tomatoes or red peppers (sliced)
eggs (2-3 per person)
shredded cheese
olive oil
salt & pepper (to taste)
Directions:
Slice veggies
Whisk eggs, season with salt and pepper and set aside
Oil pan and set to medium heat
Place wild rice in pan first and re-warm slightly, stirring in pan to get it a little crispy, almost crust-like
Gradually layer veggies, saving the cherry tomatoes or red peppers for top
Pour egg mixture over wild rice and veggies
Top with cherry tomatoes or red pepper for color
Bake on medium to simmer slowly (depending on your stove)
Add shredded cheese to top last, as Frittata cooks
Serve immediately, or store up to one day and reheat or bring to room temperature

I always use the freshest ingredients available from America’s Dairyland, Wisconsin Cheeses and my local farmer’s markets. We are fortunate to have access to the world famous, Dane County Farmer’s Market right here in Madison, WI.
Save time by preparing the wild rice in advance. Use it in other recipes throughout the week, such as a salad or, my Wild Rice Chicken Soup.
If you are serving a large crowd and using more eggs, cook on lower heat slowly so the Frittata cooks evenly and isn’t runny in the middle and doesn’t burn on the bottom.
I prefer this Frittata without meat, but you could certainly add precooked sausage or ham that’s diced.
Slice like a pie for a nice presentation and consider serving with avocados on the side.
