Grandma's Swedish Pancakes
My grandma's birthday is coming up this month. In honor of her Swedish heritage, I'm sharing the simple pancake recipe she passed down to me. A family favorite for any meal, Swedish pancakes stir up special memories of Grandma's kitchen. Enjoy!
Swedish Pancake Recipe
Ingredients:
3 eggs
1 C milk
1 1/2 C flour
1 Tbsp sugar
1/2 tsp salt
1/2 C cream
2 Tbsp melted butter
Instructions:
Mix dry ingredients together first.
Gradually add milk, eggs, cream and melted butter last.
Cook on a piping hot griddle. Sprinkle with powdered sugar, serve with fresh berries or Swedish lingonberry preserves and whipping cream.
