Grandma's Potato Salad
No picnic or family reunion is complete without my grandma's potato salad. It's a unique blend of flavors like no other. Everyone seems to agree, it's Zabelicious. In honor of her birthday this week, I'm sharing the secret recipe. Grandma's version of measuring was usually, a pinch of this and a dash of that. So the quantities listed in the recipe are approximate. Of course, I had to break out her Blue Danube China to serve the potato salad on. Grandma's Potato Salad Recipe
Ingredients:
1 bag potatoes (quartered)
3-4 green onions (diced)
4-5 radishes (thinly sliced)
4-6 hard boiled eggs (diced)reserve one for top slices)
1/2 bottle French Salad Dressing (She used Western Original Sweet & Smooth)
1/2 cup mayo (I prefer Hellmann’s)
dry mustard (pinch)
paprika (dash)
salt & pepper
Directions:
Boil potatoes (don't overcook), drain & cool
Marinate and chill in Western dressing overnight
Add diced veggies & hard boiled eggs to potatoes
Gently stir with spatula
Final steps:
Mix mayo, dry mustard, paprika, salt & pepper to taste
Add mayo blend to potato mixture
Gently toss all together
Garnish with reserved sliced eggs, sprinkle with paprika
Cover and chill well before serving
*Zabelicious Tip:
Substitute red pepper for radishes if you prefer, or use both for even more flavor and color.
