Chocolate Wafer Cake

Looking for an easy no bake cake that’s a crowd pleaser? I’ve got the recipe and I’m whipping it up for my son’s birthday. I never miss an opportunity to make a birthday cake for my kids. Especially when it's as easy my son's favorite chocolate wafer cake, which really isn't cake at all. It tastes as good as it looks. It’s so simple, it will be ready before you make a wish! Chocolate Wafer Cake Recipe

Ingredients:

  • 1 1/2 cups heavy whipping cream

  • 2 Tbsp powdered sugar

  • 2 tsps vanilla

  • 1 (9 oz) package chocolate wafer cookies (I use Nabisco)

  • 1/4 C grated chocolate

Directions:

  • Beat cream, gradually add powdered sugar and vanilla until cream forms stiff peaks.

  • Spread whipped cream on each cookie. Press cookies together to stack a few at a time.

  • Assemble cookies into the form of a log on a platter.

  • Frost with remaining whipped cream.

  • Cover tightly and refrigerate overnight, or freeze for a few hours to chill quickly.

  • Thaw before slicing.

  • Sprinkle with grated chocolate and serve with fresh raspberries.
