The Story Behind Zabelicious Cookies

This cookie recipe is a creation of mine that came out of a sparse pantry on a wintry day, when the kids were young and I couldn’t get to the grocery store. We were living in Minnesota at the time and were stuck home because of a blizzard. The boys came in from playing in the snow and were both begging for me to bake their favorite cookies; one wanted chocolate chip, the other wanted oatmeal. I didn’t have enough ingredients for either recipe and was short on butter, so I improvised. The initial creation included toffee bits; but over the years, I’ve made the switch to butterscotch chips, because they are less messy on the cookie sheet and equally delicious. The result was this recipe, which has become a family favorite. It won’t take long for them to disappear.
