Wheat Berry Salad

This colorful salad packed with essential nutrients was inspired by one on the menu at The Dog and Duck, a historic British pub in Soho. Bursting with a sweet, nutty flavor, tossed with my own Zabelicious Dressing, it's the perfect combination to please your palate. Wheat Berry Salad Recipe

  1. Mix Salad Ingredients: 

    • 1 1/2 cups wheat berries (cooked and cooled-allow plenty of time)*

    • 1 diced apple

    • 1/2 cup cranberries*

    • 2 green onions or shallots (minced)

    • 1/2 cup apricots (diced) 

    • 1 cup cherry tomato (cut in half)

    • 1 cucumber (diced)

    • 1/4 cup  sunflower seeds

    • 1/4 cup pumpkin seeds (or pepitas)

  2. Whisk the Zabelicious Dressing: 

    • 3 Tbsp olive oil

    • 1 Tbsp champagne vinegar

    • 1 lemon zest

    • 1 lemon juice 

    • 2 Tbsp honey

    • salt and pepper to taste 

  3. Toss all together and serve

Consider preparing the wheat berries well ahead of time, as they might take longer than you think to cook, depending on if you like your grains firm or soft.
