Wheat Berry Salad

This colorful salad packed with essential nutrients was inspired by one on the menu at The Dog and Duck, a historic British pub in Soho. Bursting with a sweet, nutty flavor, tossed with my own Zabelicious Dressing, it's the perfect combination to please your palate. It pairs nicely with a Pinot Gris or if I was back at the London pub, a pale ale. Read my travel story that began at the iconic bar or my safe at-home London escape ideas.

Zabelicious tips:

Consider preparing the wheat berries well ahead of time, as they might take longer than you think to cook, depending on if you like your grains firm or soft.

I had trouble finding wheat berries at first but eventually discovered this affordable organic brand at the local co-op. Jovial Foods was founded by a husband and wife team whose daughter had gluten sensitivity. They discovered this ancient grain, einkorn, nature’s original wheat. Buy direct and support this small business that ships free for orders $25 and over: www.jovialfoods.com.

Wisconsin has some of the best cherries and cranberries. I used this brand: www.countryovens.com.
