Cheese & Chutney Toastie

Cheese toasties are a staple in the London street food scene. My version is full of locally sourced ingredients, including Wisconsin cheese, of course. This recipe was inspired by a menu item from a historic British pub, The Dog and Duck, which happens to be a favorite of the royal family. The Prince and Princess of Wales just happened to pop into that pub this week for a lunch, that may have included this very sandwich. Be sure to read the story to learn more about my fond memories of this iconic London landmark. But first, let’s get back to the recipe. Using the freshest ingredients and a hearty bread, makes all the difference in this oozy, delicious sandwich. Serve with an ale or white wine.

Toastie Ingredients:

  • Cheddar Cheese (I used a combo of Bandaged Aged Cheddar and a softer younger cheddar)

  • Mustard

  • Apple Chutney or Pear Mostarda (If you use this, eliminate the mustard, because it’s already in there)

  • Tomato

  • Farmhouse, sourdough or a hearty grain bread

  • Butter

  • Spice it up as you wish with fresh herbs & pepper

Directions:

Place all ingredients in between two pieces of your favorite bread for grilling, butter the outside and grill in a pan until the cheese is melted.

Zabelicious Tips:

  • Try using your toaster oven or broiler for an open faced toastie.

  • Serve with fries or chips, like the London pub that inspired my recipe.

  • I used a combination of the following products, all of which are made in Wisconsin:

Bleu Mont Dairy Co. Cave Aged Bandaged Cheddar

Hooks Two Year Sharp Cheddar

Widmer’s Mild Brick Cheese

Quince & Apple’s Pear Mostarda

Madison Sourdough Pepitas Polenta Bread

A Pub for Princes & Paupers

A surprise stop at The Dog and Duck by the Prince and Princess of Wales this week, proves that this pub is a favorite for commoners and royals. What would you say if you had a chance to bump into them over a pint at the pub? I’d probably be tongue tied. Photos via Instagram from the Prince and Princess of Wales.
